Dark Chocolate Avocado Truffles
makes two dozen truffles, takes about an hour and fifteen minutes
- One 10 oz. bag dark chocolate chips
- One large avocado, pitted and peeled
- 2 T. dark chocolate cocoa powder
- 1 T. powdered sugar
- Mash or blend the avocado in a small bowl until there are no visible chunks. Set aside.
- Pour the dark chocolate chips into a medium sized microwavable bowl. Begin heating the chocolate in about 15 second increments, stirring between each. Continue until fully melted and creamy, about a total of a minute and a half or so. (Note: You don’t want to burn the chocolate!)
- Once chocolate is fully melted, scoop the mashed avocado into the chocolate and mix well.
- Refrigerate for 45 minutes to an hour.
- Combine the powdered sugar and cocoa powder. Set aside.
- Remove the chocolate-avocado mixture from the fridge and begin scooping out and rolling it into balls.
- Roll each ball in the cocoa powder and powdered sugar.
- Refrigerate until served.
