Happy Sunday everyone!
I hope you’re all being lazy like me. Other than making these muffins, I’ve done absolutely nothing productive today except brew a pot of coffee, watch the football playoffs, and order a pizza. I’d say today was successfully lazy, if there’s even such a thing.
OH! And… Happy 2014 peeps!!! I almost forgot. I hope you all had a wonderful New Years. I recommend staying away from my recipes if your resolution is to lose weight. I have no limits when it comes to sugar. It’s in just about every single thing I make. We’ve been a little delayed on the posting lately over here, sorry for that… 😦 I hope you haven’t been too bored throughout these winter months. I still need to go to the snow, but for the most part I’d say I’ve had a great vacation. Thankfully, I’m out of school until mid-March! (hehe)
Anyways, as usual, when I finally rolled out of bed this morning I had to stuff my face– hence, these muffins. It was exactly what I was craving.
These are one of my all time favorite homemade treats, I make them all the time and keep forgetting to blog about them. I ran across a similar recipe a year ago with dark chocolate. My obsession with white chocolate forced me into making these, being the best decision ever. They are so incredibly sweet. I would love to wake up to one of these every morning.
Naturally these, as any other sweet treat would, are the most spectacular when they first emerge from the oven. The white chocolate chips are gooey and delicious. The layer of sugar crusted on the top is a nice touch, too :] YAY sugar.
White Chocolate Chip Banana Muffins
makes 18 muffins, takes an hour
2 1/3 cup white flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
dash of salt
2 teaspoons of cinnamon
3 bananas, mashed
1 1/2 teaspoon vanilla
1/2 cup applesauce
1/2 cup turbinado sugar
1/3 cup milk* (or almond milk)
1/2 cup white chocolate chips* (or vegan white choc. chips!)
additional turbinado sugar for sprinkling
Preheat your oven to 350 degrees. In a medium bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon. In a larger bowl, mash your bananas until they are goopy. Add the vanilla, applesauce, sugar, and milk. Once fully mixed, add your flour mixture, then the white chocolate chips.
Pour the batter into a muffin tin about two thirds of the way up. Sprinkle a layer of turbinado sugar atop each muffin. Bake in the oven for 25-30 minutes, you can check with a toothpick to make sure they’re ready 🙂
*By substituting a dairy free milk and vegan white chocolate chips, this recipe is vegan!!
