Naturally these, as any other sweet treat would, are the most spectacular when they first emerge from the oven. The white chocolate chips are gooey and delicious. The layer of sugar crusted on the top is a nice touch, too :] YAY sugar.
White Chocolate Chip Banana Muffins
makes 18 muffins, takes an hour
2 1/3 cup white flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
dash of salt
2 teaspoons of cinnamon
3 bananas, mashed
1 1/2 teaspoon vanilla
1/2 cup applesauce
1/2 cup turbinado sugar
1/3 cup milk* (or almond milk)
1/2 cup white chocolate chips* (or vegan white choc. chips!)
additional turbinado sugar for sprinkling
Preheat your oven to 350 degrees. In a medium bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon. In a larger bowl, mash your bananas until they are goopy. Add the vanilla, applesauce, sugar, and milk. Once fully mixed, add your flour mixture, then the white chocolate chips.
Pour the batter into a muffin tin about two thirds of the way up. Sprinkle a layer of turbinado sugar atop each muffin. Bake in the oven for 25-30 minutes, you can check with a toothpick to make sure they’re ready 🙂
