Recipe: Sumbitches Cookies

What’s better than crunchy peanut butter, delightfully decadent caramel, and smooth milk chocolate all in one?

Nothing.

Ah yes, another recipe inspired by How I Met your Mother. At the beginning of the current season, the mother bakes these glorious cookies and Lily eats the entire batch by herself. Shocking? Not really. These cookies are bomb.

Per usual, my roomies joined me tonight while the baking commenced. With it getting so close to Christmas, I couldn’t help but want to make some cookies for my friends, family, and Santa. There was only one problem that was encountered… there was 14 minutes between each batch while we anxiously awaited the next. Many, many cookies were consumed before they were all ready to go. Oops.

The way the chocolate melts together with the caramel in this glorious combination of deadly, sugary love will change your life. Although these cookies are filled with so much sugar, the savory peanut butter keeps everything together. The more things you can fit into a cookie, the better. Right?

I only hope Santa enjoys these as much as we did.

Sumbitches
takes about an hour, makes 3 dozen cookies

1 cup butter, softened
1/2 cup granulated sugar
1 cup packed brown sugar
1 teaspoon vanilla extract
1 cup crunchy peanut butter
2 large eggs* (or egg replacer)
2 cups all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 bag of miniature chocolate & caramel candies (about 36 total)

First off, preheat the oven to 350 degrees.

In a large bowl, mix together the butter, sugar, vanilla extract, and brown sugar. Mix in the eggs & peanut butter. In a separate bowl, combine the flour, baking soda and salt.

Add the flour mixture to the liquid mixture and mix well. Fold in the small chocolate covered caramels, but be very gentle as not to break or crush them.

Bake cookies for 13-14 minutes and allow to cool for 5 minutes. Then ENJOY!
