Recipe: Spicy BBQ Chicken Sandwiches

Barbecue is probably one of my favorite things ever. I think the small city I grew up in had more places that offered barbecue than it did coffee shops when I was a youngster. I even worked at one!! Ever since then, I’ve been in this phase in which every time I feel real hunger, I’m ready to dive into a huge piece of tri tip with it’s seasoned goodness or get down and dirty with a full rack of babyback ribs lathered in sweet, sweet barbecue sauce. What’s not to love?!

Anywho, the amount of time I spent daydreaming about slowly smoked meat is not relevant here.

What is relevant is how awesome this meat tastes. I promise it won’t let you down. I will say this is probably one of the messier things I’ve created, as everyone’s entire face was covered in a layer of sauce after the sandwiches had been consumed. Just as a warning, have some napkins handy OR drain some of the sauce from the meat on the side of the crockpot before tossing it onto your bread. Or both.

Sorry about the delayed posts lately, I’ve been so backed up in classes and somehow maintaining a social life. My sleeping habits suffer greatly. This mercury retrograde is killing me, and it seems like everyone else around is on edge, too. All I can say is thank freaking gawd it’s Friday, all!

Spicy BBQ Chicken Sandwiches
makes a dozen sandwiches, takes eight hours or just one, your choice!

4 pounds of chicken
28 ounces of spicy bbq sauce
1 twelve ounce beer
4 cloves of garlic, crushed
1/2 cup of diced onion
1 tablespoon of paprika
1 tablespoon of crushed red pepper
1 teaspoon of salt
1 teaspoon of pepper

a dozen buns (I used a multigrain)

So this is super simple, whichever of the two ways you choose to do it–

For those who have time: grab a crockpot and throw all ingredients into it. Cook on high for at least 6 hours. Remove the chicken and shred, then return to the juice in the crockpot for an hour. You’re ready to spoon the meat onto your rolls!

For those who don’t: in a large saucepan, boil water with about a tablespoon of salt and add the chicken. Once the chicken is fully cooked, shred it. Empty your saucepan and add all the ingredients above, including your chicken. Cook over the stove on medium heat for at least half an hour, stirring often to ensure the flavor is being absorbed by the meat.
